Sergio's Secret Recipe #4 - Polpo Grigliato (Grilled Octopus)
“It’s rubbery” is the oft used expression when people describe their experience of eating octopus and only in the very un-pc world of Benny Hill’s Mr Chow Mein, would it be taken as a compliment if you had cooked it.
For this reason most people avoid ordering it in a restaurant or cooking it themselves and that included me, until after many attempts using different methods, I finally discovered a way of producing what I believe to be a perfect result.
If there is such a thing as an octopusaholic, I think I am one, as I cannot resist buying one when the price is good and sticking it in the freezer. They keep perfectly well frozen and some say tenderise them more.
